Cinnamon Pear Loaf

My neighbour has a couple of pear trees in his backyard so I asked if I could grab a few,

A few, I got to pick dozens! <3

The question then became what to do with them?

First up, Pear and Cinnamon loaf!

1 room temperature egg

1 teaspoon vanilla

1 cup sugar

1/4 cup pure lard

1/4 ghee

1 cup almond or cashew milk

1 tablespoon white vinegar

2 cups unbleached flour

1 teaspoon baking soda

3 peeled, cored and thinly sliced pears

1/3 cup sugar and 2 teaspoons cinnamon, mixed

Cream together lard, ghee, vanilla and egg.

Add vinegar to the milk and stir gently.

Add milk mixture to batter and mix.

Add baking soda to flour then add to batter.

Mix well.

Grease a loaf pan.

Place a layer of pear slices in the pan.

Sprinkle with a generous amount of the cinnamon/sugar mix.

Cover with half the batter,

Add another layer of pear slices and sprinkle generously with the cinnamon/sugar mix.

Add the rest of the batter.

Sprinkle with the remains of the cinnamon/sugar.

Bake at 350 degrees F for 50-60 minutes.

Cool at least 20 minutes in the pan.

Remove from pan and place on serving dish.

This recipe pairs well with ice cream while it is still warm or with

your coffee or tea for breakfast.

This loaf turned out wonderfully and was soon gone.

My kids are already asking for another one!

Truly delicious!

To your health!
