Pears: Part Two


Doesn’t this look delicious!

Pear/Cranberry Upside Down Cake

This was gone so quickly I barely got to try it myself!


1/4 cup pure lard

1/4 cup ghee

1 cup firmly packed brown sugar

1 cup sifted unbleached cake flour

1 teaspoon baking powder

Pinch of sea salt

3 room temperature eggs, separated

1 cup sugar

5 tablespoons cranberry sauce + 1 teaspoon of water

3 pears peeled, cored and thinly sliced


In a 9 x 9 x 2  inch glass pie pan, place the lard and ghee.

Melt the mixture in the oven while it preheats to 375 degrees F.

Spread the brown sugar evenly over the melted mixture.

Top with the pears slices until the bottom is covered.

Set aside.

In a large bowl sift together flour, baking soda and salt.

Set aside.

In a separate bowl, beat eggs yolks and gradually add in sugar.

Beat until smooth.

Add in cranberry sauce and flour mixture alternately to egg mixture.

Blend after each addition.

In a separate bowl beat egg whites until stiff.

Fold the egg whites gently into the batter.

Pour batter over the pears.

Bake for 30-35 minutes until golden brown on top and it looks set.

Let cool 10 minutes.

Can be eaten hot or cold and frankly my kids didn’t care as long as they got some!

It is great with clotted cream, whipped coconut cream, whipped cream and ice cream.
