Roasted Veggies


So excited that fall has finally arrived!

Time to do some veggie roasting.

I love the smell of roasting veggies in the morning.

My whole house smells just amazing!

Easy recipes and gives us side dishes for the rest of the week.

So this is what I do.

Split your acorn squash, butternut squash and spaghetti squash down the middle length wise.

Remove the seeds and loose pulp and discard.

Brush lightly with olive oil and sprinkle with  salt and pepper.

Place face down on a parchment paper lined  baking sheet.

Bake at 425 degrees F for 45-60 minutes or until cooked through.

When you give a poke it should be soft.

Remove from the oven and let cool for 10 minutes.

Turn over and strip the meat out of the shell.

You can store them in a sealed container in the fridge and just heat and serve during the week.

I also like to roast an eggplant while I am doing the squash.

Cut the eggplant in half length wise.

Cut a diamond pattern in the meat and salt the top.

Let it rest face down on parchment paper for about 45 minutes.

Wipe off the salt and excess water.

Brush lightly with olive oil, pepper and Italian spice.

Place face down on a parchment paper lined baking sheet.

Bake at 425 degrees F for 45 minutes.

Let rest 5 minutes.

Turn face up and sprinkle with a little garlic powder and lemon juice.

Strip the meat out and place in a container with a tightly sealed lid.

During the week, just heat and serve.

You can also roast the whole eggplant for about 60 minutes, let cool for 10 minutes, strip off the skin and puree the meat.

Add a little olive oil, garlic and lemon juice and you have a great dip or spread.

So much goodness ready to serve up all week!

While you are cooking the veggies up it is more than likely the other family members will make their way downstairs.

There is nothing like the smell of roasting food to draw people into the kitchen.

With the cooling down of temperatures try and make this a weekly or biweekly addition to your kitchen.

It gives you plenty of great food to add quickly to your meals and saves you a ton of time.

The timer went off so I need to go and pull all the veggies out of the oven.
