One of my favorite dishes that is quick and easy.
This dish takes no time to prepare and can be spiced however you like.
One medium sized eggplant.
Slice into rounds about 1/4 inch thick.
On a parchment paper lined cookie sheet, lay out the sliced eggplant.
Brush with olive oil.
Season with sea salt and pepper.
We like to add basil, garlic and shredded goat cheese.
We have also done cayenne pepper with mozzarella cheese,Italian spice with Parmesan cheese
and tarragon and dill with sheep cheese.
Let your imagination go wild and try some of your favorite herbs and spices!
Pop them in the preheated oven at 425 F for about 20 minutes or until the edged start to brown.
Let them sit for 5 minutes then remove and enjoy.
Highly nutritious and just a taste delight.
These can accompany just about any meal and are always welcome at our table.
We have also given this a go with zucchini and been very pleased with the results.
